We can do better than a pumpkin latte

Take it from someone who thinks of food as medicine - there's not much pumpkin in a pumpkin latte!

Yet those cravings for sweet, spicy orange foods - are REAL - they're abundant in fall and GREAT for you!

So when I thought... How can I get all that pumpkin spice goodness quickly and easily along WITH the health benefits of winter squash??? 

Here's what I came up with!

The Recipe: 

a fall favorite of mine

Works equally well as a dinner side dish, on a lunch salad, on your morning oatmeal - or as dessert with some coconut yogurt or coconut whipped cream!

How to make it

  • Choose the winter squash of your choice (I always choose local when I can.  Delicata is easiest because you don't have to peel it, sugar pumpkin, acorn, butternut or anything else works fine!) 
  • Cut the squash in half and scoop out the seeds.  If it's NOT a delicata - peel the skin off as well
  • Cut into slices or chunks
  • Melt coconut oil in a small pot.  Add honey or maple syrup, pumpkin pie spice, and a sprinkle of salt
  • Pour the coconut oil and honey over the squash and toss
  • Spread the squash pieces on parchment paper on a baking sheet and bake at 350-425 until fully cooked
  • Enjoy!!
