The full recipe: Low carb pancakes for women's health


Pancake Ingredients:

 

  • 1 small banana, 1/2 large banana, or 1/3 cup cooked sweet potato
  • 2 eggs
  • 2 heaping Tablespoons of almond butter
  • Ghee or coconut oil for to put in the pan when cooking
  • Pinch of salt
  • 2 shakes of cinnamon

Blueberry Sauce Ingredients:

  • 1/2 cup blueberries
  • 1 teaspoon ghee

Instructions:

  1. Place the blueberries and 1 teaspoon of ghee in a small saucepan.  Cover and simmer on low heat while you prepare the pancakes
  2. Smush the banana or sweet potato in a medium size bowl until quite smooth
  3. Add the almond butter and smush and stir until well combined and smooth
  4. Add the eggs and beat well
  5. Add the salt and cinnamon
  6. Heat your frying pan over medium heat then add the ghee or coconut oil and let it heat up 
  7. Pour in the pancake batter - you can make small or large pancakes - your choice.  This recipe will make 6 medium sized pancakes
  8. When the bottom browns, flip and cook on the other side
  9. Stack them up on your plate and pour the blueberry syrup on top
  10. If desired, sprinkle on toppings.  I used yogurt (coconut yogurt is also great,) chocolate chips, and cut up papaya and kiwi
